Amazing Lime & Ginger Cheesecake

This is probably my signature dessert, All my Family & Friends request this when they come round. it tastes amazingly naughty but is unbelievably light & fresh.
It is so simple you just throw everything in and mix it together, cool  serve.

Ingredients

How to

  1. Mix together the crushed biscuits and the butter and press it into the base of an 18cm spring form or loose bottomed cake tin.
  2. Leave to chill in the fridge for at least one hour.
  3. Meanwhile, remove the mascarpone cheese from the fridge to soften a little.
  4. Beat together the mascarpone cheeseicing sugarlime zest and juice.
  5. Spread over the biscuit base.
  6. Chill for 30 minutes.
  7. Carefully remove the cheesecake from the tin and decorate the top with the chocolate decorations and the lime zest.
